Liverpool has never had a Michelin star but many think '8' by Andrew Sheridan could be the answer
A Liverpool chef who has caught the attention of Michelin says he'd "love a star" but his main goal is to "make sure the customers are happy and keep everyone in a job."
Andrew Sheridan was born in Liverpool and grew up in North Wales, beginning his career as a chef when his dad got him a job at a local pub. He told the ECHO: “There’s no love story about my grandmother teaching me how to cook. I didn’t actually want to be a chef. He said: “I hated doing high-volume food so I decided to see if it would work if I opened a little restaurant and started ‘8’ in Birmingham, which only had 16 covers. You can concentrate more on doing decent food with less numbers.
“Then the old Fraiche site came up in Oxton and I thought: ‘We’ll take that as well!’ Fine dining food must have worked there because was there for years. So we opened OXA and that’s doing really well too." Sheridan said: “Real foodies come here. In our first year we’ve done really well. We’ve got three rosettes within our first four months, ‘8’ got in the Michelin Guide, OXA got in the Michelin Guide - they’ve just got two rosettes. To be honest, as long as we’re full and I’m happy cooking the food, that’s the goal.
