異色の経歴が生んだ、江戸前の気概とフリーフロー 鮨の世界は系譜が重要視される。 どの店で修業し、誰の弟子なのか─そんな文脈で語られることも少なくない。 だが「鮨 一喜」喜代永隆文の歩みは、そこから少し外れたところにある。
デザイナーを志して上京し、アパレル会社に勤務していたという、鮨職人としては一風変わった経歴の持ち主なのだ。 とはいえ、「鮨 一喜」の鮨がファッショナブルな創作鮨というわけではなく、握りはむしろまっすぐな江戸前。 和食店や鮨店での修業を重ね、魚の持ち味を引き出す丁寧な仕事を積み上げてきた。 つまみと握りを交互に出すスタイルにも、料理人としての経験が生きている。 2020年に世田谷・千歳船橋で開業し、人気店となったのち渋谷へ移転。
宮益坂裏の路地に構えたカウンター8席の空間は、黒を基調にいかにも渋谷という大人の遊び心を感じさせる。 店の個性を象徴するのが、コースに含まれるフリーフローの酒だ。 シャンパーニュや日本酒などを自由に楽しめるこのスタイルは、格式を重んじる鮨店ではあまり見かけないものだろう。 江戸前の仕事はきっちりと守りながら、酒とともに気持ちよく鮨を楽しんでほしいという喜代永の思いがそこにある。
