. I never thought of it as "healthy." And because it was so creamy and good, I probably ate twice as much as I would eat of regular butter anyway.
In my adult mind, Better Butter was a childhood food, something I left behind when I went to college—a treat I would enjoy while visiting my parents or grandparents. It never occurred to me to make my own Better Butter until I'd been living on my own for close to a decade.
