I’m welcomed by Cindy and Timotea, who deliver their workshops with clarity and warmth. Wearing colourfully embroidered shirts, they guide us into the black orchid-garlanded open-air kitchen where the hearth is firing up. Before long, there’s an impressive spread of dishes to try. We feast on chaak-ik with oni-waj and pirix p-ak . A desert of caramelised pumpkin is delicate and delicious. It’s inspiring to spend the morning with the women whose tourism business is keeping their culture strong.
might be better known for Mayan culture and ancient sites among travellers, but Belize offers a quieter, more cost-effective alternative.A short drive from the co-operative is the Xunantunich archaeological site, which I access by hand-cranked ferry over the Mopan River. There’s a hardly another soul around as I climb the central pyramid, El Castillo’s gargantuan steps up to its giddy heights.
