Since the dish is meatless, I like to add some greens to my lasagna for a truly veggie-packed casserole. Frozen spinach, thawed and drained, works well here, but you can also use cooked kale, collards, or any other greens that you have on hand. I encourage you to try the recipe as written the first time that you make this, but once you’ve got the technique down, feel free to get creative. Noin your pantry? Use diced instead.
