A Spanish wine bar plus an artisan charcuterie market will be among the first, if not the first, in Jacksonville when they open in historic San Marco.
They will join established neighborhood restaurants Taverna, Town Hall, Matthew's Restaurant, Bistro AIX, Fuji Sushi, The Loop, Pink Salt + Wine Bar, Starbucks and more.At Bar Molino, expect traditional Spanish tapas on the menu, which will feature several staples as well as several seasonal small plates, Young said.
The wine bar will source fresh local seafood, produce and seasonal ingredients from Northeast Florida for its dishes, he said. "We're making dry-cured sausages like fuet, Spanish chorizo, and salamis like finocchiona," he said."We'll also have whole muscle cured items like coppa, lomo, and ultimately hams like prosciutto.""We'll have the capacity to cure over 500 pounds of product at a time," he said."By pairing The Swinerie and Bar Molino together, we'll be able to use the entire animal with extremely limited waste.
