Paramedic Alisha Haynes shared her tips for eating healthy meals affordably
A Lancaster student claims to have found a way to feed her flatmates for as little as 70p through discounted deals and bulk buys.
Paramedic student Alisha Haynes designed a healthy plan in a bid to help her and her fellow university students fight the cost of living crisis while still eating healthily. The rising cost of food combined with the unsociable hours involved in the training - including 12 hour shifts on placement - forced Alisha to get creative.
She decided a meal plan was the best way to achieve all of this with a combination of finding good deals and batch cooking and freezing meals. She also chose to buy meat in bulk from online retailer Muscle Food. Alisha said: "Living on a student budget is tough but you can make the cash stretch further if you think about what you want to eat and shop around to find the cheapest ingredients."She continued: "I began cooking for me and my housemates last year and they loved it.
"I cook all sorts from chili con carne to sausage pasta bake and chicken stir fry. Sometimes it shocks me how cheaply I can cook up a meal", the keen cook continued. Alisha says that she has managed to cook a range of meals for budget prices including tandoori thighs with rice and greens for 68p a portion, sausage pasta bake for 78p, and a pork noodle stir fry for 81p a portion. The paramedic-in-training said that her top tips for saving money would be buying essentials such as pasta and rice in bulk, as well as planning your meals ahead of time which would lead to less food waste.
