Francesco Manjo, one of the developers, spoke to us at the Maker Faire Rome 2023 about why they use crickets instead of other insects. He told us, "There are many reasons, one of them is they are very high in complete protein - up to 80 percent protein content where at the same time they are very easy to use in terms of flour."According to the company's website, just 40 grams of Small Giant crackers pack 9 grams of protein.
