A shimmering, bronzed turkey is, for many Americans, the highlight of colossal Thanksgiving feasts. Although this basted bird is synonymous with the gluttonous day, vegetarians need not settle for spongy slabs of Tofurky Roast & Gravy or fill up on green bean casserole alone.
Typically, a bowl of buttery mashed potatoes is the revered carb at Thanksgiving dinner. But Johanna Hellrigl, executive chef at Via Umbria in Washington, D.C., encourages putting pasta in the spotlight instead. Inspired by vincisgrassi, veal-mushroom lasagna popular in Italy’s Marche region, Hellrigl whips up a vegetarian riff with just the fleshy fungi.
