Pleasantly springy and fragrant with soy sauce, oyster sauce, and Shaoxing wine, Chinese meatloaf is delicious served on its own or atop Cantonese claypot rice.

1 raw salted duck egg 1 scallion, root end trimmed, white and green parts thinly sliced, for garnishingIn a small saucepan set over medium heat, melt the lard until liquid, about 1 minute. Reduce heat to medium-low and add scallions, shallots, cilantro, garlic, and ginger. Gently sauté, swirling the pan occasionally, until the aromatics are fragrant and begin to turn golden brown. Deglaze the pan with the Shaoxing wine, then add water, light soy sauce, dark soy sauce, and sugar.
The salted duck egg used here should be raw. Salted duck eggs are available to purchase in most Asian grocery stores, but if you can only find cooked duck eggs, I suggest crumbling it into the meatloaf instead of placing it on top, as this will flavor the meatloaf throughout.

Former ByteDance executive says Chinese Communist Party tracked Hong Kong protesters via dataA former executive at ByteDance, the Chinese company which owns the popular short-video app TikTok, says in a legal filing that some members of the ruling Communist Party used data held by the company to identify and locate protesters in Hong Kong. Yintao Yu, formerly head of engineering for ByteDance in the U.S., says those same people had access to U.S. user data, an accusation that the company denies. Yu also says he saw the 'superuser' credential used to track Hong Kong protesters and civil rights activists by monitoring their locations and devices, network information, SIM card identifications, IP addresses and communications. ByteDance denies the allegations.
