This was 1971. Mariano’s was beginning to make a name for itself in the Dallas area, and Martinez was concerned that complaints could cost him his business. The next morning, Martinez stopped by a 7-Eleven for some coffee and gum after a sleepless night. It was inside the convenience store where Martinez came up with the idea that would not just help control the quality of his restaurant’s drinks, but eventually change the industry.
His father would mix ice, tequila and Cointreau with lime juice. “My father always insisted Cointreau was better than simple syrup,” Martinez says. Martinez says he learned that Americans weren’t used to the flavor of tequila, but mixing the liquor with lime and something sweet made it more palatable.
That’s because most Mexicans don’t drink tequila in the form of margaritas. In the same way that Americans sip whiskey straight up or on the rocks, Mexicans do the same with tequila.
