Add the spring onions, shallots and onions and fry with the lid on for 10 minutes until soft. 2. Heat 1 tablespoon of the olive oil in a frying pan on a medium heat and fry the shallot until golden, about 5 minutes. Remove from the heat and set aside.
6. Fold the excess dough over the centre, and brush with the beaten egg. Press the remaining Red Fox cheese into the pastry.
