You know what would make this day better? A chocolate pudding pie.
I just made the filling, which was quite good. A little less starch than the recipe I've been using, and part cocoa instead of chocolate, made for a lighter texture, which I liked. Also no butter. I did it straight, other than subbing in an ounce or two of leftover coffee for some of the milk, but you could add flavorings , more cocoa, nuts etc. with no problem.
I loved this recipe, especially with the salted whipped cream ! I was really intrigued on the author's goal with the salted whipped cream, so I didn't want to use plain whipped cream. After reading the reviews, here are the adjustments I made to the whipped cream: -Reduce small granulated salt to somewhere between 1/8 tsp. & 1/4 tsp. -Increased the powdered sugar to 3 tbsp. With the adjusted amount, the whipped cream was a perfect compliment to the earthy darker chocolate.
