Ever since Vallejo resident Monique Feybesse was a teenager, she had a desire to be a good chef. She’s had plenty of success, but recently her career has really been cooking.
“I cannot tell you how surprised I was because I was not expecting anything at all,” Feybesse said. “We decided as a family to run with it and see where it went. When the final interviews came and I was one of the chosen candidates, I had doubts that I should even participate because I felt guilty at the thought of leaving my two young kids and Paul to run Tarts de Feybesse. My entire family pushed me to compete because I had their full support and help.
In fact, Feybesse is used to challenges, having opened up her pastry shop in Vallejo during the pandemic during the middle of her maternity leave with her and Paul’s second soon. Soon after the food industry closure began. “We both agreed that Tarts de Feybesse would be rooted in French cuisine and that was such an easy decision to make because Paul is French and I’ve always had a love for cooking in a French style,” she said. “We basically have two additional criteria that need to fit in every item that we make — One, it has to be delicious and two, it has to be absolutely gorgeous.”
Feybesse didn’t apply to any colleges after high school as she knew immediately it wasn’t for her. Instead she began researching what it would like and what it would take to become a chef. She applied to the California Culinary Academy in San Francisco and started learning there in 2006 when she was just 17.
